The cakes arrived on a plate with perfectly dry, crispy bottoms. I wrapped each one up in piquant mustard greens and dunked them into the old woman’s fine blend of fish sauce, chilies and julienned carrots.

It was the kind of meal that made me feel like I’d gone somewhere.
